Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark, as preferred)

Optional toppings: whipped cream, maple syrup, fresh berries, or extra chocolate chips

Instructions

Prep the Batter: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

Mix the Batter: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the chocolate chips.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease with melted butter.

Cook the Pancakes: Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown and cooked through.

Serve: Serve immediately with your choice of toppings such as whipped cream, maple syrup, fresh berries, or extra chocolate chips.
