Tex-Mex Chopped Chicken Salad

Ingredients
  

2 cups cooked and shredded chicken breast

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

1/4 cup red onion, finely chopped

1/2 cup grape tomatoes, halved

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1/4 cup lime juice

1/4 cup olive oil

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Tortilla strips for garnish (optional)

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, avocado, red onion, grape tomatoes, and cheddar cheese.

    In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined. This will be your dressing.

      Pour the dressing over the chicken salad mixture and toss gently until all ingredients are well coated.

        Add the chopped cilantro and give the salad one final toss.

          For extra crunch, top with tortilla strips if desired.

            Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together.
