4 cups fresh strawberries, hulled and halved

4 cups ripe peaches, peeled, pitted, and sliced

1/2 cup granulated sugar

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 tablespoon cornstarch

For the Crisp Topping:

1 cup old-fashioned rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Fruit Filling: In a large mixing bowl, combine the strawberries and peaches. Add in the granulated sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Toss gently until the fruit is well coated and set aside to macerate for about 10 minutes.

      Make the Crisp Topping: In a separate bowl, mix together the rolled oats, flour, brown sugar, baking powder, baking soda, and salt. Pour in the melted butter and mix with a fork or your hands until the mixture is crumbly. If using, stir in the chopped nuts.

        Assemble the Crisp: Pour the fruit mixture into a greased 9x13 inch baking dish. Evenly distribute the oat mixture over the top of the fruit.
