Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

1 cup mini marshmallows

1 cup graham cracker crumbs

Extra mini marshmallows and chocolate for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

    Make the Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until the mixture is light and fluffy, about 2-3 minutes.

      Add the Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients while mixing until just combined.

          Fold in Chocolate and Marshmallows: Gently fold in the chocolate chips, mini marshmallows, and graham cracker crumbs until evenly distributed throughout the batter.

            Spread in the Pan: Carefully spread the cookie dough mixture into the prepared baking pan, smoothing it into an even layer. If desired, sprinkle additional mini marshmallows and chocolate chips on top.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set. A toothpick inserted should come out with a few moist crumbs, but not wet batter.

                Cool and Slice: Let the cookie bars cool in the pan for at least 10-15 minutes. Once cooled, use the parchment paper (if used) to lift the bars out and transfer them to a cutting board. Slice them into squares or rectangles.
