Ingredients

2 tablespoons olive oil

4 boneless, skinless chicken thighs

Salt and pepper, to taste

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup spinach (fresh or baby)

1 cup orzo pasta

4 cups chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions

Sear the Chicken: Heat the olive oil in a large skillet or a deep pan over medium-high heat. Season the chicken thighs with salt and pepper. Once the oil is hot, add the chicken thighs and sear for about 6-7 minutes on each side until golden brown. Remove from the pan and set aside.

Sauté Aromatics: In the same pan, add the minced garlic and Italian seasoning, sautéing for about 1 minute until fragrant.

Add Veggies: Toss in the cherry tomatoes and cook for about 2-3 minutes until they begin to soften. Then, stir in the fresh spinach until just wilted.

Cook Orzo: Add the orzo pasta to the pan, followed by the chicken broth. Stir to combine, ensuring the orzo is submerged in the liquid. Bring to a gentle boil.

Combine Everything: Return the chicken thighs to the pan, nestling them into the orzo mixture. Reduce heat to low, cover, and simmer for about 15-20 minutes until the orzo is cooked and the chicken is tender.

Add Cream and Cheese: Once the orzo is cooked, stir in the heavy cream and grated Parmesan cheese. Mix well until everything is creamy and smooth.

Garnish and Serve: Remove from heat and let the dish rest for a few minutes. Garnish with fresh basil before serving.
