8 large eggs

1 cup egg whites

1 cup cooked lean turkey sausage, crumbled (or turkey bacon)

1 cup black beans, drained and rinsed

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

1 cup shredded low-fat cheese (cheddar or Mexican blend)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 whole-wheat tortillas

Fresh cilantro, chopped (for garnish)

Salsa or hot sauce (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the whole eggs and egg whites. Add in the ground cumin, smoked paprika, salt, and pepper. Mix until well combined.

      Cook the Vegetables: In a skillet over medium heat, add a splash of cooking spray or a small amount of olive oil. Sauté the diced onion and bell peppers until they are soft, about 5 minutes. Remove from heat.

        Combine Ingredients: In the prepared baking sheet, spread out the cooked vegetables, crumbled turkey sausage, black beans, and half of the shredded cheese evenly. Pour the egg mixture over the top and sprinkle with the remaining cheese.

          Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the egg is set and the top is golden brown.

            Cool and Cut: Remove the sheet pan from the oven, let it cool for a few minutes, then use a sharp knife to slice the egg mixture into 8 equal pieces.

              Assemble the Burritos: Take a whole-wheat tortilla, place an egg piece in the center, and roll it up tightly. Repeat this process for all pieces.

                Serve: Serve immediately with fresh cilantro on top and salsa or hot sauce on the side, or wrap individually in foil for meal prep.
