Ingredients

4 boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon cornstarch (optional, for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and pepper. This will be your marinade and sauce.

Place the chicken thighs in a large ziplock bag or a shallow dish and pour half of the marinade over the chicken, reserving the other half for cooking. Let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Heat olive oil in a large skillet over medium-high heat. Remove chicken from the marinade and discard the used marinade.

Once the oil is hot, add the chicken thighs to the skillet. Sear on each side for about 5-6 minutes until they develop a golden-brown crust.

Reduce the heat to medium and pour the reserved marinade over the chicken. If you’d like a thicker sauce, mix the cornstarch with a tablespoon of water and add to the sauce.

Cover the skillet and let the chicken simmer for about 10-12 minutes, flipping halfway, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Remove the chicken from the skillet and let it rest for a few minutes. Meanwhile, increase the heat to high and bring the sauce to a boil until it thickens slightly, about 2-3 minutes.

Slice the chicken and drizzle the thickened sauce over the top. Garnish with chopped green onions and sesame seeds.

Serve with steamed rice or your choice of sides and enjoy!
