2 cups cooked shredded chicken (preferably rotisserie for convenience)

1 cup black beans, drained and rinsed

1 cup low-fat cottage cheese

1 cup salsa (mild or spicy, based on preference)

4 whole wheat tortillas

1 cup shredded low-fat cheese (cheddar or Mexican blend)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 375°F (190°C).

    Mix Filling: In a large bowl, combine the cooked shredded chicken, black beans, cottage cheese, and half of the salsa. Mix well until all ingredients are thoroughly combined.

      Assemble Enchiladas: Lay out the whole wheat tortillas on a clean surface. Spoon an equal portion of the chicken filling onto each tortilla, then roll them tightly and place seam-side down in a greased baking dish.
