Garlic Chicken Gnocchi Skillet

Ingredients
  

1 pound gnocchi (store-bought or homemade)

1 pound boneless, skinless chicken breasts, diced

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Cook Gnocchi: Boil a large pot of salted water. Add gnocchi and cook according to package instructions, usually until they float (about 2-3 minutes). Drain and set aside.

    Sauté Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

      Garlic & Tomatoes: In the same skillet, add the remaining 2 tablespoons of olive oil. Add minced garlic and cook for about 30 seconds until fragrant. Be careful not to burn it. Add the cherry tomatoes and cook for an additional 3-4 minutes until they begin to soften.

        Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.

          Combine: Return the cooked chicken to the skillet, add the gnocchi, and toss everything together. If using red pepper flakes, sprinkle them in at this stage. Season with additional salt and pepper if desired.

            Cheese Me Up: Remove the skillet from heat and sprinkle with grated Parmesan cheese. Toss to combine until the cheese is melted and everything is well-coated.
