Fudgy Chocolate Brownie Cookies

Ingredients
  

1 cup (200g) semi-sweet chocolate chips

1/2 cup (115g) unsalted butter

3/4 cup (150g) granulated sugar

1/4 cup (50g) brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup (130g) all-purpose flour

1/2 cup (50g) unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup (90g) chocolate chunks or additional chocolate chips (optional)

Flaky sea salt for topping (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Melt the chocolate and butter together in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until fully melted and smooth. Allow to cool slightly.

      In a large mixing bowl, combine the granulated sugar, brown sugar, and melted chocolate mixture. Stir until well mixed.

        Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.

            Fold in the chocolate chunks or additional chocolate chips if using.

              Using a cookie scoop or tablespoon, drop cookie dough balls onto the prepared baking sheets, leaving about 2 inches of space between each.

                Sprinkle a pinch of flaky sea salt on top of each cookie dough ball if desired.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. Don't overbake for that fudgy texture!

                    Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

                      Serve warm or at room temperature, and enjoy your fudgy chocolate brownie cookies!
