Ingredients

2 large apples (such as Granny Smith or Honeycrisp)

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup milk (or buttermilk for extra richness)

1 large egg

1 teaspoon vanilla extract

1 cup breadcrumbs or crushed cornflakes

1/2 cup granulated sugar

Extra cinnamon for dusting

Vegetable oil, for frying

Instructions

Prepare the Apples:

    - Wash and core the apples. Slice them into 1/4-inch thick rings. You can leave the peel on for added texture and color. Set aside.

      Make the Batter:

        - In a mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

          - In another bowl, combine the milk, egg, and vanilla extract, then pour this mixture into the dry ingredients. Stir until just combined; the batter should be smooth but thick.

            Prepare for Frying:

              - Spread the breadcrumbs or crushed cornflakes on a plate.

                - In a large skillet or deep saucepan, heat about 1 inch of vegetable oil over medium heat until it reaches about 350°F (175°C).

                  Fry the Apple Rings:

                    - Dip each apple ring into the batter, allowing the excess to drip off.

                      - Then, place the battered ring into the breadcrumbs, pressing gently to coat all sides.

                        - Carefully drop the coated apple ring into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook each side for about 2-3 minutes or until golden brown.

Drain and Coat with Cinnamon Sugar:

                            - Once fried, use a slotted spoon to transfer the rings onto a plate lined with paper towels to absorb excess oil.

                              - In a separate bowl, mix the granulated sugar with additional cinnamon. While the apple rings are warm, toss them in the cinnamon sugar mixture until evenly coated.

                                Serve:

                                  - Serve warm as a delightful dessert or sweet snack. They pair wonderfully with a scoop of vanilla ice cream or a drizzle of caramel sauce.
