1 lb ground beef (80/20 blend for juiciness)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

8 small flour or corn tortillas

1 cup shredded cheddar cheese

1 cup lettuce, shredded

1 medium tomato, diced

½ cup pickles, sliced

¼ cup red onion, thinly sliced

¼ cup mayonnaise

2 tbsp ketchup

1 tbsp mustard

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prepare the Beef Mixture: In a bowl, season the ground beef with garlic powder, onion powder, salt, and pepper. Mix gently to combine without overworking the meat.

    Preheat the Skillet: Heat a large cast-iron skillet or non-stick frying pan over medium-high heat until hot.

      Form and Smash the Patties: Divide the beef mixture into 4 equal portions (about 4 oz each). Roll each portion into a loose ball. Place one ball onto the hot skillet, using a spatula or a heavy frying pan to smash it down into a thin patty. Repeat with remaining balls, leaving space between each for cooking.

        Cook the Patties: Let the patties cook for about 3-4 minutes without moving until a crust forms. Flip them using a spatula and immediately sprinkle shredded cheddar cheese on top. Cook for another 2-3 minutes until the cheese has melted and the patties are cooked through.

          Warm the Tortillas: While the burgers are cooking, warm the tortillas in a separate dry skillet over medium heat or microwave them for about 15-20 seconds until pliable.

            Assemble the Tacos: To assemble, place one cheesy smash burger patty in the center of each tortilla. Top with shredded lettuce, diced tomato, sliced pickles, and red onion.

              Make the Sauce: In a small bowl, combine mayonnaise, ketchup, and mustard. Stir to mix well.
