Easy One Pot Creamy Tomato Pasta

8 oz (225g) penne pasta

1 can (14 oz) diced tomatoes (with juices)

2 cups vegetable broth

1 cup heavy cream

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Olive oil for sautéing

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the canned diced tomatoes (with juices), vegetable broth, and dried spices (basil, oregano, salt, and pepper) to the pot. Bring the mixture to a boil.

        Once boiling, add the penne pasta to the pot and stir well to combine. Reduce heat to a simmer and cover the pot with a lid. Cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed some of the liquid.

          Lower the heat and stir in the heavy cream and grated Parmesan cheese. Mix until well combined and creamy. Taste and adjust seasoning as necessary.

            Serve hot, garnished with fresh basil leaves if desired.
