Ingredients

4 medium potatoes, diced (yellow or red work great)

1 medium onion, chopped

1 bell pepper (any color), diced

3 cloves garlic, minced

1 cup cooked breakfast sausage, crumbled (or plant-based alternative)

4 large eggs

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or your choice)

2 tablespoons olive oil

Optional toppings: chopped green onions, avocado slices, hot sauce

Instructions

Prepare the ingredients: Start by washing and dicing the potatoes into small cubes, and chopping the onion and bell pepper.

Cook the potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt, pepper, smoked paprika, and chili powder. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Add veggies: Push the potatoes to one side of the skillet and add the chopped onion and bell pepper to the other side. Sauté for about 5 minutes until the vegetables are softened. Stir everything together.

Add sausage: Add the crumbled breakfast sausage to the skillet, stirring it in with the potatoes and vegetables. Cook for another 5 minutes to heat the sausage through.

Cook the eggs: Make four small wells in the hash. Crack an egg into each well. Cover the skillet with a lid and let the eggs cook for about 5-7 minutes until the whites are set but the yolks are still runny (or cook to your desired doneness).

Add cheese: Sprinkle the shredded cheese over the hash and cover again for 1-2 minutes until the cheese is melted.

Serve: Remove from heat and garnish with optional toppings like green onions, avocado slices, and a dash of hot sauce. Serve warm and enjoy your delicious loaded breakfast hash!
