Ingredients
  

2 large flatbreads or naan bread

1 cup cooked and shredded chicken (rotisserie chicken works great)

½ cup buffalo sauce (adjust to your heat preference)

1 cup shredded mozzarella cheese

½ cup crumbled blue cheese (optional)

¼ cup diced red onion

¼ cup chopped fresh cilantro (for garnish)

1 tablespoon olive oil

Salt and pepper to taste

Optional: ½ cup sliced celery (for topping)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chicken: In a medium bowl, combine the shredded chicken with the buffalo sauce. Mix well until the chicken is evenly coated. If you like it extra spicy, feel free to add more buffalo sauce.

      Prepare the Flatbreads: Place the flatbreads on a large baking sheet. Brush each flatbread lightly with olive oil to give them a nice crisp texture.

        Assemble:

          - Evenly distribute the buffalo chicken mixture over each flatbread.

            - Sprinkle the shredded mozzarella cheese generously on top of the chicken.

              - If you're using blue cheese, add it on top of the mozzarella.

                - Disperse the diced red onion over the cheese for an extra crunch.

                  Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and slightly golden.

                    Garnish: Remove the flatbreads from the oven and allow them to cool for a couple of minutes. Top with fresh cilantro and, if desired, sliced celery for added crunch.
