Dump-and-Bake Chicken Tzatziki with Rice Recipe

1.5 lbs boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 cup diced cucumbers

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup plain Greek yogurt

2 tablespoons olive oil

3 cloves garlic, minced

2 tablespoons fresh lemon juice

1 teaspoon dried dill

Salt and pepper to taste

Fresh parsley, chopped for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Rice Base: In a large, greased baking dish, spread the uncooked rice evenly across the bottom. Pour in the chicken broth over the rice and stir to combine.

      Season the Chicken: In a bowl, mix the olive oil, minced garlic, lemon juice, dried dill, salt, and pepper. Coat the chicken thighs in this mixture and place them on top of the rice and broth in the baking dish.

        Add Veggies: Scatter the diced cucumbers, cherry tomatoes, and red onion over the chicken thighs.

          Cover and Bake: Cover the baking dish tightly with aluminum foil and bake for 35-40 minutes, or until the chicken is cooked through and the rice is tender.

            Prepare the Tzatziki Sauce: While the chicken is baking, mix the Greek yogurt, diced cucumbers (reserve a few for garnish), garlic, lemon juice, dill, salt, and pepper in a bowl. Adjust seasoning as desired and refrigerate until ready to serve.

              Serve: Once the chicken is done, let the dish cool for a few minutes. Remove the foil and fluff the rice with a fork. Serve the chicken over the rice, drizzled with Tzatziki sauce, and sprinkle with fresh parsley and reserved cucumbers for garnish.
