2 cups cooked rotisserie chicken, shredded

1 cup uncooked orzo pasta

2 cups chicken broth

1 cup Greek yogurt

1/2 cup cucumber, grated and drained

1/4 cup fresh dill, chopped

2 cloves garlic, minced

1 teaspoon lemon zest

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

Salt and pepper to taste

Fresh mint leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large casserole dish, combine the shredded rotisserie chicken, uncooked orzo pasta, and chicken broth. Stir to combine.

      In a medium bowl, mix together the Greek yogurt, grated cucumber, dill, minced garlic, lemon zest, salt, and pepper until well combined.

        Spread the tzatziki mixture evenly over the chicken and orzo in the casserole dish.

          Top with cherry tomatoes and crumbled feta cheese.

            Cover the casserole dish with aluminum foil and bake for 25 minutes.

              Remove the foil and bake for an additional 10-15 minutes, or until the orzo is tender and the top is slightly golden.

                Allow the casserole to cool for a few minutes, then garnish with fresh mint leaves before serving.
