Ingredients

1 lb ground beef (80% lean)

1 medium yellow onion, thinly sliced

4 slices of rye bread

4 slices of Swiss cheese

2 tablespoons Worcestershire sauce

2 tablespoons butter, softened

Salt and pepper, to taste

Optional: spicy mustard or mayonnaise for serving

Instructions

Prepare the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized (about 15-20 minutes). Remove from the skillet and set aside.

Form the Patties: In a large mixing bowl, combine ground beef, Worcestershire sauce, salt, and pepper. Form the mixture into two equal-sized patties.

Cook the Patties: In the same skillet used for the onions, add a bit more butter if needed. Cook the patties over medium-high heat for 4-5 minutes on each side, or until they reach your desired doneness. Place a slice of Swiss cheese on top of each patty in the last minute of cooking to melt.

Assemble the Patty Melts: Spread softened butter on one side of each slice of rye bread. On the unbuttered side of two slices, layer a patty with melted cheese and a generous amount of caramelized onions. Top each with another slice of rye, buttered side facing out.

Grill the Sandwiches: In the same skillet, grill the assembled sandwiches over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and crispy.

Serve: Slice each patty melt in half and serve immediately with spicy mustard or mayonnaise on the side if desired.
