Cinnamon Sugar French Toast Muffins

Ingredients
  

1 cup milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 cup granulated sugar

4 cups bread (cubed, stale or toasted)

1/2 cup chopped pecans (optional)

1/4 cup unsalted butter (melted)

Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

Instructions
 

Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.

    In a large mixing bowl, whisk together the milk, eggs, vanilla extract, 1 teaspoon of cinnamon, and 1/4 cup of sugar until well combined.

      Add the cubed bread to the mixture and stir until the bread is well-coated and starts to absorb the liquid. If you’re using pecans, fold them in gently at this stage.

        Let the mixture sit for about 10 minutes to allow the bread to soak up the egg mixture.

          While the mixture is soaking, prepare the cinnamon sugar topping by combining 1/4 cup of sugar with 1 teaspoon of cinnamon in a small bowl.

            Evenly distribute the bread mixture into the prepared muffin tin, filling each cup about 3/4 of the way full.

              Drizzle the melted butter over the top of each muffin, then sprinkle generously with the cinnamon sugar topping.

                Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                  Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely or serve warm.
