Ingredients
  

2 cups diced potatoes (fresh or frozen)

8 strips of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

Optional: hot sauce for serving

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish or casserole dish with non-stick spray.

    Cook the Potatoes: If using fresh potatoes, you can pre-boil them for about 10-15 minutes until slightly tender. If using frozen diced potatoes, you can use them directly.

      Layer the Ingredients: In the bottom of the greased baking dish, spread the diced potatoes evenly. Sprinkle the crumbled bacon over the potatoes, followed by the cheddar and mozzarella cheeses.

        Make the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          Combine and Pour: Pour the egg mixture over the layered ingredients in the casserole dish, ensuring all layers are covered.
