Ingredients

1 pound large shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup shredded cabbage (green or purple)

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

8 small corn or flour tortillas

Lime wedges for serving

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (or to taste)

1 teaspoon lime juice

Instructions

Prepare the Bang Bang Sauce: In a small mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

Prep the Shrimp: In a medium bowl, combine the panko breadcrumbs, flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.

Coat the Shrimp: Dip each shrimp into the beaten eggs, ensuring it is completely coated, then dredge in the breadcrumb mixture, pressing gently to adhere.

Air Fry the Shrimp: Preheat the air fryer to 400°F (200°C). Arrange the coated shrimp in a single layer in the air fryer basket (you may need to do this in batches). Spray lightly with cooking spray. Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy.

Warm the Tortillas: While the shrimp are cooking, heat the tortillas on a skillet over medium heat for about 30 seconds on each side, or until warm and pliable.

Assemble the Tacos: On each tortilla, add a layer of shredded cabbage, top with air-fried shrimp, and place a few slices of avocado. Drizzle generously with the Bang Bang sauce and sprinkle with chopped cilantro.

Serve: Squeeze fresh lime juice over the tacos and serve immediately with lime wedges on the side.
