1.5 lbs chicken thighs, boneless and skinless, cut into chunks

1 medium onion, chopped

3 cloves garlic, minced

1 inch fresh ginger, grated

1 red bell pepper, chopped

2 medium tomatoes, diced

1 cup smooth peanut butter

4 cups chicken broth

1 can (14 oz) coconut milk

2 tablespoons vegetable oil

2 teaspoons ground cumin

2 teaspoons paprika

1 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

2 cups chopped kale or spinach

1 lemon, juice and zest

Fresh cilantro, for garnish

Cooked rice or couscous, for serving

Instructions
 

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Add the chicken chunks to the pot and brown them on all sides, about 5-7 minutes.

        Mix in the red bell pepper, diced tomatoes, ground cumin, paprika, cayenne pepper, salt, and black pepper. Stir everything well to combine.

          Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook uncovered for 15 minutes.

            Whisk in the peanut butter and coconut milk until smooth. Continue to simmer for another 10 minutes, allowing the stew to thicken slightly.

              Stir in the chopped kale or spinach and lemon juice and zest. Cook for an additional 5 minutes until the greens are wilted.

                Taste and adjust seasoning as needed.

                  Serve the stew over cooked rice or couscous, garnishing with fresh cilantro.
