Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional)

1 green onion, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

2 cups cooked jasmine rice (for serving)

Instructions

Prep the Chicken: Start by cutting the chicken thighs into bite-sized pieces. This allows them to cook quickly and soak up the flavors.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the chicken pieces in a single layer. Let them sear for about 3-4 minutes without moving them to get a nice golden color.

Sauté Aromatics: Add the minced garlic and grated ginger to the pan with the chicken. Stir-fry for about 30 seconds, just until fragrant.

Make the Sauce: In a small bowl, combine the soy sauce, brown sugar, hoisin sauce, rice vinegar, sesame oil, and crushed red pepper flakes (if using). Stir well until the sugar is dissolved.

Combine: Pour the sauce over the chicken. Stir well to coat all the pieces evenly. Allow it to cook for an additional 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.

Garnish and Serve: Remove from heat and sprinkle with chopped green onion and sesame seeds. Serve hot over jasmine rice for a delicious balance of flavors.
